Beer Biscuits 

 

4½ cups reduced fat Bisquik
(or 4 cups Bisquik and ½ cup wheat flour)
½ cup sugar (use less if biscuits are too sweet)
1 12oz. can of beer (room temperature)
¾ stick (3oz.) butter - melted

 

 

Pre-heat oven to 375-400 degrees.

Mix biscuit mix and sugar until well blended. Starting with about 1/2 cup and adding more as needed, mix in beer to form a wet, tacky dough (just a little wetter than the usual biscuit dough).  Spoon the dough onto a flour-covered surface.  Lightly dust the top with flour, then pat out dough by hand to a uniform thickness of about 1/2 inch.  Cut biscuits with a cutter or water glass.  Cover the bottom of a heavy, straight-sided baking pan with the melted butter and arrange biscuits in the pan. Baste the tops with more of the melted butter.
Bake approximately 20 to 25 minutes (this may require adjustment).
