Belgian Waffles
1 pkg dry yeast (2 1/4 tsp) 4 eggs,
separated 1 tsp vanilla |
2 1/2 cups sifted flour 1 Tbsp
sugar 1/2 cup melted butter |
In a large bowl, sprinkle the yeast over the warm milk and
stir. Beat the yolks only and add them to the yeast mixture. Add
the vanilla to the mixture. In a separate bowl, mix the flour, salt and
sugar. Add these to the liquid mix you have in the other bowl. Stir
in the melted butter. In a separate bowl, beat the egg whites until they
are stiff. Fold these into the batter. Let the mixture stand in a
warm place until it doubles (normally about 45 minutes or more). Scoop
the mixture into your favorite Belgian waffle cooker and cook them. Enjoy
with your favorite toppings.
