Heat
oil in a heavy 10-inch skillet, preferably cast iron, over medium-high heat. Add potatoes, sprinkling
layers generously with salt and pepper. Brown
bottom layer of potatoes and turn bottom potatoes to the top. When potatoes on bottom start to brown, work middle potatoes toward
the bottom. This will take about
15 minutes. Distribute onions evenly
throughout potatoes. Cover skillet,
lower heat, and cook until potatoes are tender, 15 to 20 minutes. Scrape crisp
parts from the skillet when serving.
