Potato Patties

3/4 cup water
2 Tbsp margarine

1/2 tsp salt

2/3 cup milk

1 3/4 cups instant potatoes
1 egg, slightly beaten

1 Tbsp chopped chives

Vegetable oil


 I n medium saucepan, bring water, butter and salt to a boil; remove from heat.  Stir in milk and 1 1/2 cups instant potatoes until moisture is absorbed.  Stir in egg and chives.  Using 1/3 cup mixture for each, shape into patties; coat with remaining instant potatoes.  In large skillet, brown patties in oil on both sides.  Serve hot.
