Spanish Tortilla

1 med. Potato - nuked & cubed
1/2 white onion - diced

1/2 can peas

1/2 jar marinated artichoke hearts

 

2 large cloves garlic
Parmesan cheese

Pepper and Paprika

4-5 Eggs

Stir fry onion, potato, garlic in 3-4 Tbsp olive oil for 5 minutes.  Add peas and hearts for 1 minute. Add beaten eggs for 1 minute.  Sprinkle cheese and paprika on top.  Broil 6 inches from high broiler until set and browned.
